birthday breakfast
I wanted to start a birthday breakfast tradition that can be carried on for all of our littles...one that would be quick, easy, special - and of course, could be done before school (thinking ahead). So, I put Mike on figuring out what this could be! He came up with the perfect idea: donuts, milk & balloons. What kid doesn't love these things first thing in the morning?!

Mexican |Shredded| Chicken Stuffed Peppers
The 2nd new recipe I tried last week was Mexican shredded chicken stuffed peppers. Healthy and delicious. Win, win! Plus, I usually have bell peppers in the fridge and chicken in the freezer, so this was the perfect recipe to use up those items. We'll definitely be adding this to our rotation.
Mexican Shredded Chicken Stuffed Peppers
Ingredients:
- 4 large bell peppers, any color is fine
- 3-4 chicken breasts, depending on size
- 1 can diced tomatoes
- 1/2 c. the tomato juice from the can OR 1/2 c. chicken broth
- 1/4 c. finely minced onion
- 1 jar salsa (to cook the peppers in)
- shredded cheese
- 1 package of Simply Organic Taco Season
Directions:
- Put whole chicken breasts and all ingredients in crockpot and stir and set on low for 6-8 hours.
- When it’s finished or after at least four hours in, shred chicken using two forks until it’s all complete. Mix well.
- Using a sharp knife, cut the top of the pepper off and pull out all the inside ribs and seeds.
- Run under cold water to wash and remove remaining seeds inside.
- Stuff peppers with chicken mixture, cover with salsa (so they don’t dry out) and bake at 350 for 20 minutes until pepper is soft.
- Top with shredded cheese and the salsa!

|almost| paleo pepperoni pizza casserole
I've been in a cooking rut for a little while about 6 or 7 months now. We have a pretty good rotation (mostly Whole30 dinners) but after going through this rotation over and over (and over and over) the same meals get old! So, thanks to Pinterest we added a couple of new things to our rotation last week and they were delicious! Plus, I still got to use my beloved spaghetti squash! Yummo!
|almost| paleo pepperoni pizza casserole
Ingredients:
1 pound ground meat of your choice
8 ounces chopped pepperoni, divided
1 small onion, diced
garlic powder to taste
1 teaspoon sea salt (or more to taste)
1 teaspoon EACH pepper, oregano, basil, and thyme
4 cups roasted spaghetti squash noodles
2 cups favorite spaghetti sauce
1/2 cup mozzarella cheese or pecorino romano, and few tablespoons extra for sprinkling
Directions:
- Preheat oven to 400 degrees.
- In a large skillet over medium heat, saute the ground meat, 1/2 of the pepperoni, onion, and garlic powder.
- As the ground meat cooks, sprinkle in the seasonings. Taste (when cooked!) and add more to your liking if necessary.
- In a large bowl, mix the warm beef mixture, spaghetti sauce, squash threads, eggs, and cheese of choice.
- Place into a greased casserole dish ( I used a 8x8 and it was FULL).
- Top with the remaining pepperoni and a sprinkling of cheese.
- Bake for 30 minutes, or until golden and bubbly

Halloween on Tyler Street
We combined 3 houses into one yard on Halloween. We moved our couch to the front yard (we may have a hint of redneck going on over here...), ate dinner and passed out candy to the few trick-or-treaters that came by. If nothing else, we had a blast catchin' up with our neighbors and watching these two little guys enjoy their very first Halloween!
