I've had a harder time with these weekly pictures with Baby M2 - not because I don't want to do them -- I desperately want this sweet baby to have pictures to look back on like Amos will...but I'm having sort of a "writer's block." I don't want to copy the chalkboard (/ at the end it got to be more burdensome than fun) but I want a creative way show off the ever growing bump. So -- ideas are welcomed. (:

On Mikey's real birthday we celebrated with his very favorite food, pizza. Papa kept Amos so we could go out just the 2 of us -- to Mellow Mushroom. (:

birthday festivities | part 1

Friday night we celebrated Mikey's (upcoming) birthday with cake at our house with some of our closest friends! You know that I love a good birthday celebration and since Mike's actual birthday is Monday (today), I used it as an excuse to celebrate all weekend. (: I also love any reason to celebrate my boy!

Coconut Crusted Turkey Burgers | Paleo


I found this recipe on pinterest recently & decided to try it. Let's just say...these burgers will be added to our Whole30 (approved) rotation! They were a little time consuming, but so yummy! And, you can definitely make a double batch and freeze 1/2! 

Ingredients:
  • 1 Pound ground Turkey (chicken or beef will work too)
  • 1 Egg yolk
  • 1 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/4 cup + 1/2 cup almond flour (*I made my own)
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup coconut oil (*I used way less)
  • Salt & Pepper

Directions:
1. Preheat oven to 350 degrees.
2. In bowl combine 1/4 cup flour, 1/2 cup coconut and salt & pepper, mix to combine.

3. In separate bowl combine the ground turkey, 1/2 cup flour, onion powder, garlic powder, egg yolk and salt & pepper. Mix well until everything is incorporated.
4. In sauté pan, melt coconut oil on medium heat. 
5. Form pattys with turkey mixture then coat with the coconut and almond mixture. Repeat with remaining turkey. You should make 4 burgers.

6. Place burgers into heated coconut oil and cook on each side for about 7-10 minutes.
7. Transfer burgers to a parchment lined bake pan and place in oven for 5-10 minutes to allow Turkey to cook through. Serve.

I had mine with spicy mustard & a side of sliced avocado. Next time we'll have sweet potatoes with these burgers!

Vail, CO | Part 1

After a wonderful trip to Vail with Mike's family (minus DP & Mere), I came down with some sort of horrible stomach bug and felt like I was dying for about 5 days. It was awful to say the least. But, enough about that!

Mike, Mel, Amos & I boarded a plane at GSP and headed to Denver where we rented a car & drove to Vail (well, Mikey drove while the rest of us slept). After successfully arriving at our destination, we snuggled into bed 1) because it was super late 2) because Mel, Mimi, Papa & I were skiing the next day!
